I'm sort of suspicious, though.

I mean, it's all cool and whatnot, but seriously. It's clearly cut into the potato, and she even admits that she cut out the bad part. That lends itself to your idea that the bad part of the potato was the jesus part so it's the anti-christ potato.

But it still rings of manipulating the facts for her own spiritual gain, and I'm sure it may even fetch some money at some point from someone who wants the Jesus potato.
